docs: DoD requires retaking screenshots + demo GIF on every release#78

…ease The version is rendered in the splash banner and the status bar, so a version bump alone changes the UI — screenshots and the demo GIF go stale on every release, not just on feature work that touches the UI. Names the scripts that regenerate them so the step is actionable.

Dennis's edit to the Definition of Done, completed.
The version is rendered in the splash banner and the status bar, so a version bump alone changes the UI. Screenshots and the demo GIF therefore go stale on every release, not only when feature work touches the UI — which is easy to forget when a release is otherwise docs-only.
Fills in the script names so the step is actionable (
scripts/capture-screenshots.mjs,scripts/make-demo-gif.mjs+.py) and fixes the duplicate step number.Docs only — no runtime code.
