This needs Clang 18, and that's not supported in EESSI:

Using sysroot is not supported by EasyBuild for non-minimal LLVM < 19 (at easybuild/easyblocks/l/llvm.py:942 in configure_step)

Closing the PR since this version of ITK has a dependency on LLVM/Clang 18.x, which is not supported in EESSI.
