Remove Enso's simulator support

Description

Remove the Enso Trade Simulator backend. It's unused and adds unnecessary code to maintain.

Changes

• Remove the unused Enso simulator backend — deleted the enso/ module and cleaned up all references in configs, driver, and simulator crates.
