#169) Move the entire v1 line (cookiecutter sources, rendered templates, and all three examples) to vite ^8.1.5 and @vitejs/plugin-react-swc ^4.3.2 in lockstep. The examples-check-deps CI gate requires every v1 example to match the v1 template's toolchain versions exactly, so Dependabot's per-example bumps could never go green on their own. Bumping the template and examples together satisfies that check. Regenerating the example lockfiles also pulls postcss 8.5.23 and drops rollup (Vite 8 bundles with rolldown), superseding the standalone transitive-bump PRs. Supersedes dependabot PRs #160, #162, #163, #166, #167, #168.
