docs(js): move Astro instrumentation content

I moved the content on Manual Instrumentation we currently have in the Astro quick start guide:

• disable auto instrumentation -> created a new section in tracing/instrumentation/automatic-instrumentation (only for Astro)
• handleRequest -> added a new section at the bottom on configuration/apis (only for Astro)

In the handleRequest example that we currently have in the quick start guide, we list an option called "trackHeaders". I wasn't able to locate the option in the sdk so I removed it from the API documentation --> please let me know if this is wrong, and I'll add it back :)
